Freezer Slaw and a Sweet Baby Boy


I hope that you all have missed my postings. I have been in North Carolina helping my daughter with her new baby boy and her sweet three year old. I went for a few weeks and ended up staying a month. It seems like that happens quite often in my journeying.
I had a great visit and fell in love with the new little one very fast. Before I made my departure last week, we spent one entire afternoon cutting, chopping, and filling her freezer with meals. We used crock pot recipes that could go directly from the freezer to the slow cooker. With the new baby's arrival and the toddler's busy play date and preschool schedule, she can always have a nutritional meal on the table when daddy gets home from work.

 One of my favorite freezer meals sides that I prepare at home is Freezer Slaw. It begins with packaged Angel Hair packaged slaw mix and is easy to put together and freeze. It always comes out of the freezer just as delicious as when it is prepared fresh. 

Freezer Coleslaw

1 1/2 cups sugar
1 cup cider vinegar
3 packages (10 ounces) shredded angel hair cabbage slaw
1 large carrot shredded
1 small green pepper diced
1 teaspoon celery salt
1 teaspoon mustard seeds

Bring sugar and vinegar to a boil in a small saucepan, stirring until sugar dissolves. Cool

Combine cabbage and next 4 ingredients. Pour vinegar mixture over cabbage mixture, tossing to coat. 
Place in heavy duty plastic bags and stack in your freezer. Don't forget to date your bags. Freeze up to 4 months. Thaw in refrigerator overnight and enjoy.

We originally found this recipe many years ago in the 1999 Southern Living magazine, but it has become a family recipe that we love. I swear that the longer it is frozen, the better it tastes.
